Our sustainable food philosophy is predicated on a commitment to supporting local agriculture and reducing our environmental footprint, by sourcing ingredients directly from our organic farm on property and other trusted local producers.

Our farm to fork menus are designed around the seasonal availability of produce, ensuring that every dish is crafted with the freshest and most sustainable ingredients. You can enjoy fresh meals, with hand-picked ingredients from our own organic farm. Ultimately, we’re on a mission to provide fresh, healthy food while minimising environmental impact.

Reducing the carbon footprint of our dishes

We’re aiming to reduce the food miles of our dishes by sourcing locally, which dramatically decreases the distance food travels from the farm to your table, resulting in fresher food and a smaller carbon footprint. Instead of thousands of food miles, our food at Apes Hill will be measured in island miles as we promote an authentic and sustainable lifestyle.

Sustainability is a journey, and our journey at Apes Hill has certainly begun. 

Zero-waste kitchen operations

We are working closely with local companies to implement a comprehensive waste management program across the resort to compost organic waste and recycle materials. With this effort we aim to reduce landfill waste and enhance the fertility of our soil, thereby promoting healthier crops. 

Cultivating organic produce on-site

Our team has been exploring eco-friendly farming techniques including natural pest controls and the creation of habitats for biodiversity to increase pollination of our plants. This is why we’ve installed over 30 bee boxes across our community, which have provided several yields of organic honey, utilised in our ice creams and other desserts at The Noisy Cricket Bar and Restaurant. Our focus on soil health also aids in our efforts to produce the healthiest crops including breadfruit, bananas, papaya, tomatoes, pineapple, cocoa, limes, mangoes, and a variety of herbs. 

Water conservation

Much like across our golf course, sustainable water use is a cornerstone of Apes Hill’s farming practices. The farm employs targeted drip irrigation from our rainwater reservoir to conserve the precious, and scarce water resource. This method delivers water directly to plant roots, minimising evaporation and ensuring efficient use of our water. 

Educational programs and community engagement

Apes Hill also prioritises education and community involvement. Tours are offered to educate members and guests about the significance of our land, our organic farming practices, and the benefits of organic food to the pursuit of wellness. By fostering a deeper connection to the land and its produce, we encourage a culture of sustainability and health-conscious living.
